I’ve been making a lot of very simple produce centered dishes as of recently. It makes sense. The weather is still decent after all.
I will be getting into more complex and time consuming dishes in the next month or so. However, I need to get a light and beautiful flavour combination out of the way before the hearty dishes get going.
Chopped heirloom tomatoes and cucumbers with a drizzle of good balsamic vinegar, olive oil, and salt & pepper.
I know, it’s obvious. There's no recipe because it is literally what it says. But here’s the thing, a salad or side dish like this is only brilliant if the tomatoes are market fresh and bursting with juices. Oh no, A dry tomato will just not do. You must use tomatoes that are boast worthy. You must use "I am not worthy" tomatoes. You must only use tomatoes where you can tell the farmer that they have changed your life. Okay, the last one might be a little much. But you get the idea.
If your tomatoes are not special on their own then your salad isn't going to be all that it could be..
You may obviously add sliced basil. However, if you can taste the herbs that the tomatoes were grown alongside of than the addition of basil is entirely unnecessary.
